Bikini season is almost upon us. Actually, as my friend Camilla put it – tank top season. One of the easiest ways I know is to improve your diet and almost every single girl I know says – I will just have a salad. Well, I think salads generically are boring, tasteless, and very blah. Then I realizes, that is probably because I take spinach, add some cherry tomatoes, chopped carrots, English cucumber and diet dressing and call it a day.
I have been trying to be good, as you might have seen from my Instagram last week, but with the wedding this past weekend I need to pretty much hit re-set. Especially with Monday’s Cinco de Mayo lunch of chips, guac, margaritas, and fried soft shell crab. Delicious, yes, but not good for my girlish figure. Oh goodness, well, yesterday marked start of getting back on track and I think some of these might be very helpful:
Kale, Edamame, and Quinoa Salad
Quinoa Chickpea and Avocado Salad
Tequila-Lime Shrimp and Quinoa Salad
With these ten salads I should be off to a good start and just for the heck of it I looked up the definition of salad because I was not sure these would quality – they do not by the two first definitions (a) : a mixture of raw green vegetables (such as different types of lettuce) usually combined with other raw vegetables or (b) : a mixture of small pieces of raw or cooked food (such as pasta, meat, fruit, eggs, or vegetables) combined usually with a dressing and served cold. But the third definition, which is by far the broadest, (c) a usually incongruous mixture – that one works!
Any tips or ticks for a delicious summer salad?

I love incorporating fruit into salads! At the coffee shop I work at we serve the Sundried Apple Salad which has romaine lettuce, sun dried tomatoes, bleu cheese, apple slices and walnuts with a vinaigrette and it’s uh-mazing!

Mmm the strawberry ones look so yummy! I usually need to have chicken in my salad or I don’t find it filling enough and then I’m starving an hour later. 🙂
