We are half way through the week and half way through my first attempt at clean eating. It is mid day Wednesday and over the weekend I decided to try five days of clean eating. But let me be clear, the purpose of this was not to weight loss and this is a bit different than Paleo or Whole 30. The reason behind this clean eating experiment is that I am actually trying this to see if it will help with my skin. Sadly may acne has been out of control lately, hence all of the Instagram filters.
When I shared some of my meal prep yesterday I got a DM saying “I feel like you are the cleanest eater I know already!” and while flattering it is certainly not true. I certainly have improved my fitness over the last 15 months but sadly being in shape is different than having a good diet. Clean eating focuses around fresh, whole foods and for me this means cutting out protein powder, Diet Coke, and power bars.
As I have never tried clean eating I did a bunch of research before I even went to the grocery store and most of the articles I found suggested different 14 day plans. When making long list of foods to purchase list I referenced Eating Well’s 14-Day Clean-Eating Meal Plan or the article Here’s A Two-Week Clean Eating Challenge That’s Actually Delicious on Buzzfeed but decided to start with five days.
Now that I am half way through here are some of the recipes I have tried out and liked. Most are from cookbooks, blogs, or websites focused on clean eating but a few are off book so if they called for thing like protein powder I subbed them out but will likely come back to them later in the month because they were tasty!
3 Minute Lemon Dijon Vinaigrette from Laughing Spatula
Vegan Quinoa Avocado Salad from Feel Good Foodie
Spinach, Peanut Butter & Banana Smoothie from Barefeet in the Kitchen
Balsamic & Parmesan Roasted Broccoli from Eating Well
As I commented to Mark on Monday – it is crazy how colorful our fridge is right now! Even though there are only 2.5 days left there are still a number of options I want to try:
Hummus-Crusted Chicken from Eating Well
Avocado-Egg Toast from Eating Well
Have you heard of clean eating or is it something you would want to try?

LuAnn says
Never would have thought that you could put humus on chicken but looks interesting. I also adore sesame seeds so that would be icing on the cake.
Carol says
Some of these look really tasty and I want to try the last balsamic chicken. I applaud you.
