Avocado seems to be everywhere these days, from the corner markets to the menus of five star restaurants. Since I started eating the fruit two years ago, I have started ordering salads with avocado all the time. Some NYC hotspots even serve them plain; you just use a spoon to eat them out straight out of their skins!
At home, one of my favorite dishes to make is a caprese salad with avocado – tomato, basil, and fresh buffalo mozzarella all go together perfectly. Besides my preferred ways of eating avocados, they can also be used in a variety of dishes, such as:
Grilled Steak with Avocado Sauce
Eggs in Avocado Slices for Breakfast
Chickpea Salad Stuffed Avocados
Chilled Avocado and Yogurt Soup with Melon
Stacked Crab and Avocado Salad
Portobello Mushrooms with Kale Pesto Guacamole
The only real downside? They are 234-240 calories per cup and 77% of that is fat. Yes, good fat, but still fat… Definitely not a diet food. That said, I would like to try each and every one of these dishes. Please and thank you.
