Welcome to the last day of February and wow does it feel like this month has flown by. In the last four weeks the top two questions friends, family, and coworkers have asked are, “Are you ever home?” and “where are you off to next?” but seeing as I have been on a plane every week of 2018 those are both fair questions. The answer to the first question is yes, I am often home and the second, I’m headed to Atlanta tomorrow. For those night when I am home one of my favorite things to do is cook because while eating out can be nice it’s also a great change to be able to control everything you are putting into your food and even better, know where it came from.
Today I have partnered up with the amazing company HelloFresh to show you just how easy and delicious homemade meals can be. When the box arrived last week I could not wait to get it open to see which of the meals from the Classic Choices I was going to have the opportunity to prepare. I had been scoping out that week’s menu online and was thrilled to see three delicious options – Pineapple Pork Chops with Sugar Snap Peas and Jasmine Rice, Creamy Dill Chicken with Roasted Potatoes and Green Beans, and the Juicy Lucy Burger with Tomato Onion Jam and Arugula Salad. To be honest the hardest part was deciding which one to make first but as my Mom and I both love pineapple and snap peas we went for the pork chops!
Now, to be fair, I have posted quite a few easy recipes here on Sparkles and Shoes but the six steps that took us from a bag full of ingredients (which were terrifically packaged with ice to keep the meat cold) to a beautiful plate for Pineapple Pork Chops were a breeze to follow. So easy in fact that whether you are Top Chef or you have never stepped foot in the kitchen you will have no problem playing up something beautiful. The only thing that was not mentioned was the specific type of pan to cook things in but the photos made it quite easy to infer. Take a look at the process:
From the two remaining meals we have also already made the Creamy Dill Chicken with Roasted Potatoes and Green Beans which gets an A+ in my book – especially the unexpected Dijon and Dill sauce, so simple but so tasty! The burgers will be last and after the first two, I have high expectations. And I must note I had the meals ordered to my parents house in Florida where I got to take advantage of my Mom’s phenomenal kitchen but let me tell you – the next box is already on its way to NYC for me to make in my apartment!

My husband and I work full time and get tired of either the expensive and not so healthy “take out” or the plan B of a box type meal. This looks healthy and fairly quick and we will have to give it a try. Plus if we have a glass of wine while making a new dish or two it might be a fun way for us to unwind after a long day of work. We will have to put in an order this weekend.

I love Hello afresh! We’ve been getting the boxes for a little over a year and the food has been consistently fresh and delicious. We eat such a larger variety of recipes too.
