BBQ-Rubbed Pork Shoulder With Creamy Slaw
It is that time of year when day after day the thermometer reads below freezing and warm dinners are a must. And despite lockdown workdays are busy for both Mark and I. After a day of calls if we then both workout in the evening that means dinner gets started quite late. One fix? Starting dinner in the mid afternoon thanks to slow cooker recipes! As you might have guessed from my recent fitness posts I am trying to make good food choices and Mark loves eating healthy so high protein slow cooker recipes are right up our ally.
Mark is a bit picky, no veggie only options and stay away from delicious items like avocado (sad face) or substitutes like tofu. Below you will find A lot of chicken options as it is the leanest option you can get
The best quote from Mike, the chef behind the creamy chicken dish below when he said, “Awesome like a mug of warm mint chocolate on a chilly autumn day, like a day at the Spa, like a sink without dirty dishes, like running 10k under 35 minutes — that kind of awesome.” Yup, that is pretty much exactly how I feel. Here are the recipes I have bookmarked and I want to try:
Crispy Slow Cooker Pineapple Chipotle Chicken Tostadas
5-Ingredient Honey Sriracha Chicken
Slow Cooker Sweet Potato Curry
Slow Cooker Asian Chicken Lettuce Wraps
Slow Cooker BBQ Pulled Chicken
Slow Cooker Chicken Tortilla Soup
Indian Butter Chicken (Chicken Makhani)
Slow Cooker Maple-Balsamic Chicken and Vegetables
Tangy Slow-Cooker Pork Carnitas Tacos
Which of these high protein slow cooker recipes would you try?

I mostly use my crock pot for chili and have several different recopies that I use especially if we are having people over to watch a game or card night and I want an easy dinner that is all prepared ahead of time.
It is also one of my go to shower gifts for people getting married.

I adore my crock pot. Sweet and sour meatballs for parties is one of my go to menu items.
I also just found the pot roast from Honey Baked Ham Company to be insane. I add fresh carrots, a whole onion, new potatoes and a jar of extra gravy and oh my goodness…. perfection.

These are just in time. I am getting tired of cooking the same old thing as we try to be healthy during our COVID experiences.
Crazy how much more I am cooking at home now and this is some much needed diversity and inspiration.
