It is the middle of the July so the signs that read “get your Summer body ready” are finally gone from all of the gyms but just because we are in the peak of the season does not mean it is the time to drop the health or fitness. If you have been following along on my Insta you will have noticed I have been trying to make a concerted effort to improve my fitness. And the great part? It has been going really well!
The other part that mixes with the fitness though is the nutrition and I am looking for more interesting ways to spice things up. Thus, when I came across a great colorful salad on Pinterest I went down an wonderful rabbit whole of recipes. I had a heath teacher in middle school who advised that you want every meal to have as many colors in it as possible and these rainbow salad options definitely fit the bill. Take a look:
These seven salads all look like something I would love to order at a restaurant but not necessarily something I would make at home! And while the picture on S&S really does not want to load I would also add this rainbow option with Orange to the line up of delicious options above!

That color comment is perfect. I am going to use it with my kids and start making rainbow salads to get them to try new things in their salads and make it fun. Great idea.

Yummy and the ones in the glass jar are adorable…perfect for a summer party.
My favorite summer salad is one with many colored beets over a bed of spinach with a few dollops of goat cheese.
The ones you have chosen will give me some new suggestions.
