It has been way too long since I have posted a new recipe on Sparkles and Shoes and I am excited to bring them back at a more regular cadence! Now that I am home (for the most part) my kitchen is back to being fully stocked and today I want to share one of my favorite Summer dishes, an easy chicken sandwich. While not quite a recipe I first put these ingredients together a few years ago and have since perfected my Open Faced Chicken TBM Sandwich and it has become a favorite lunch or dinner options when it is hot out.
Ingredients: Rotisserie chicken, fresh mozzarella, tomato, basil, whole wheat toast, salt, pepper, and balsamic vinaigrette.
Directions: Place whole wheat toast in the toaster oven and while toasting shred the Rotisserie chicken and slice the cheese and tomatoes. Drizzle the toast with balsamic vinegar and then place two washed and dried basil leaves on the bread followed by the cheese, tomato, and shredded chicken. Garnish with diced basil and salt and pepper to taste.
