This wonderful combination is probably my favorite meal or addition to a meal. When the mozzarella is fresh, especially when it is homemade Buffalo mozzarella, the tomatoes are the perfect redness with juice ozing from every bite but not overripe, and the basil smells as if it has just been picked, that is my favorite.
This combination is delicious by itself as a salad- called Insalata Caprese – or on bruschetta, a pizza, a panini or as a sandwich. It can be seasoned with a variety of toppings but I usually find it with kosher salt, freshly ground black pepper, and extra virgin olive oil, however, my particular favorite is when it has balsamic vinegar. After this post, I am definitely going to go find a TBM sandwich for lunch, yum!
