I have a new favorite side dish and it is easy, my favorite type of recipe. A few weeks ago I headed to my friend Caitlin’s birthday potluck and had to come up with a great dish that would travel well on the subway and only require minimal re-heating. My automatic default for this type of event is my cranberry walnut-bread but I could not find any fresh cranberries so I turned to my Plan-B, pigs in a blanket. Unfortunately, someone else on the guest list had already signed up for these, leaving me with a great opportunity to try a new recipe, one I had pinned months ago. This peas and pancetta dish is adapted from Chef Bobby Flay’s Peas with Shallots and Pancetta found here.

One of my new infatuations is finishing dishes with Maldon Sea Salt Flakes, it makes every meal taste better, including these peas and pancetta. My mom gave me a portion of her box to take home at Christmas and since I have turned to it so frequently I will have to buy my own soon.
